have you met pho? it’s a wonderfully healing noodle soup that originates from vietnam. my roommate introduced it to me when i first moved back to colorado and i was immediately hooked. loaded with ginger, garlic, and other healing spices, this dish is something i always crave when i’m not feeling my best. whether i just need a boost of vitamins, something warm on the throat, or a little spice in my life – i reach for the pho. Qrunch burgers featuring sauteed vidalia onions
23 Mayi’m pretty sure i have mentioned Qrunch burgers before… they are ahh-mazing. a coworker introduced them to me a while back and i have been hooked ever since. i made my quinoa patty benedict with them once, and i have also just eaten them as a side dish. i was inspired by the seasonal vidalia onions available right now. this is oh-so-simple, too. i could’ve easily eaten two, as well. 🙂 Continue reading

potato latkes w/ homemade applesauce
14 Mayi seriously love having a food processor. it has changed my life. i don’t necessarily mind chopping, it’s actually kind of relaxing to me… cooking in general is, really. but for making fun dishes like potato latkes, having a food processor makes things so much easier – and more fun. sprout sammy
10 Mayi LOVE sprouts! love them. not all sprouts are created equal, however. i’m not a fan of ALL sprouts, but i do love pea sprouts. especially on my sandwiches!!! i want to try to grow my own some day, as they do get pretty expensive and are so perishable. but they add a ton of flavour to my favourite sammy combo – avocado and tomato. i made a yummy sandwich for lunch the other day and i had to share the recipe. i originally wanted to do a wrap, but forgot to pick some up, so i used my trusty sandwich flats 🙂 Continue reading
{vegan} meat and potatoes
30 Aprnow, it’s not what you think. no soy products, no “fake meat” textures, no lackluster flavours.
i feed this meal to my roommate at least twice a month. it is a standard in this home. a healthier spin on the classic meat and potatoes dish. my roommate loves it, even requests it from time to time – a regular “meat and potatoes” kind of guy totally short of licks his plate dry, he likes this meal so much. Continue reading
grilled tomato and cheese w/ baby leeks

cheesy polenta black bean salad
10 Aprsure, that’s a good title for this concoction – haha.
i wanted to use up the polenta i had in the fridge from earlier this week, so i made this dish around that. as i mentioned before, i am all about ‘”the pile” lately – kind of like a salad – some stuff is cold, some is cooked or warm… it’s my new thing i guess. my roommate always asks, “is this an audrey creation or did you find this recipe somewhere?” when i said, “i just made this up.” his response was, “you’re so creative in the kitchen!” that makes me smile! 🙂 Continue reading
