{sally salad volume 2}

as many of you already know, i am sometimes referred to as “sally salad” because well… as the kids are saying these days, IYKYK. 😛

i created this big salad a couple weeks ago for a gathering and people often comment on how good my salads are. to be honest, i’m actually not sure why haha. it could be because of the dressing i use {it’s kind of a trade secret but i don’t gate-keep – so feel free to comment or ask}. that said, what i feel may be the case, is that i put a lot of love into food that I prepare/cook. it is truly a love language for me. it’s like – being in the kitchen is one of the only ways i feel i have any sort of control most of the time. i get to create on my own terms, in my own way, with my own rules, on my own time. and i deeply love that… especially in todays world. but also, i truly do enjoy sharing food with others and so i tend to believe that people can feel that when they eat the food i make. it’s a beautiful thing, really.

so anyway here’s a pretty salad i recently made 🙂

starts with a bed of super crispy romaine lettuce… with cucumbers, tomatoes, olives, carrots, celery, sweet onions, fresh parsley. sometimes i like to add cabbage or artichokes… or in this case, i did add a little heat with some peperoncinos. always finished with my favourite champagne vinaigrette. very much the epitome of “eat the rainbow” 🙂

oops, this email was accidentally sent out last month – my mistake… anyway, happy summer, y’all!

i found this recipe through an instagram account {@katherinewants} and i was inspired to try it.

it’s adorably called – “big salad, little steak.”

i have been eating this at least 1-2 times a week, lately. it satiates me in such a way, and it’s also easy to make {now that i’ve mastered it}. i used to be so intimidated by cooking steak… i would always overcook it and/or ruin the overall taste or quality. so i hadn’t tried making it in years. then i discovered this recipe and method for cooking steak, and i am proud to say i’ve been nailing it every time! i don’t have a grill, so using a cast iron pan is perfect for my apartment lifestyle.

i believe three key factors make the main difference in how this steak is prepared :

  • quality of steack
  • quality of butter
  • basting!!!

the best meals always start with some of the simplest ingredients : 

  • grass-fed strip steak
  • garlic
  • shallots
  • rosemary & thyme
  • grass-fed butter
  • romain lettuce
  • parmigiano reggiano
  • caesar dressing

the best meals also start with some of the simplest techniques :

  • bring steak to room temperature
  • season steak liberally with salt & pepper
  • add steak to a very hot cast iron pan and sear on one side for approximately 2-3 minutes
  • turn steak on its side to render the fat
  • flip steak to other side and add butter, garlic, shallots, and herbs
  • baste, baste, baste – approximately another 2-3 minutes or until internal temp of 110
  • remove from heat and allow to rest

slice steak to your desired thickness. serve with caesar salad {croutons optional} and a glass of prosecco {maybe-not-so-optional ;)}. Continue reading

we all know how much i love kale. i’ve also been known to eat copious amounts of swiss chard. and i never turn away spinach, especially in a smoothie… and sometimes, nothing satisfies like a gigantic bowl of fresh-chopped salad mix…

i know we are heading into winter, but don’t forget to eat a lot of colour during this season!

a simple salad is a fantastic and delicious way to get raw, dense nutrients into your system. while i do find myself “craving” salad a little less during the winter months, i recognize how important it is to eat a salad as often as possible. in the summer i have one every day, but in the colder months, i typically want warm food {like most of us.}  salads are a great way to absorb nutrients through healthy fats {add avocado, for example} and to get extra fiber in your diet. sometimes, i just want crunch, texture, tangy, salty, slightly cheesy, light food.  and usually i crave a salad.  i eat really well, generally speaking.  i have a healthy, well-balanced diet.  and so if i’m craving something, i listen to that craving.  i have noticed i’ll crave something like this simple salad after i’ve loaded up on too many carbs or rich proteins.  it’s like my body finds a way to tell me i need the balance… so cool.

i’ve been kind of a slacker eater this past week.  i was up in the mountains for work a couple weeks ago and the company gave us a pretty hefty per diem for food, so i just splurged.  plus, it’s a 3-hour ride so we snacked and snacked! also, uhm… continental breakfast!?  yes, please.  every morning! cheesy polenta black bean salad

sure, that’s a good title for this concoction – haha.

i wanted to use up the polenta i had in the fridge from earlier this week, so i made this dish around that.  as i mentioned before, i am all about ‘”the pile” lately – kind of like a salad – some stuff is cold, some is cooked or warm… it’s my new thing i guess.  my roommate always asks, “is this an audrey creation or did you find this recipe somewhere?”  when i said, “i just made this up.” his response was, “you’re so creative in the kitchen!”  that makes me smile! 🙂 Continue reading
