{what goes great with oktoberfest beer?? — homemade sauerkraut!!}

i love love looooove making my own food. i especially love making things that are expensive to buy, but cheap to make. case and point : sauerkraut.

sauerkraut is one of my favourite things ever. it’s so good for you, and it’s been around for centuries… it’s one of those ancestral foods like homemade bone broth that has proven to be a staple for health in many ancient cultures for ages.

sauerkraut is FULL of healthy probiotics, which are essential for maintaining a healthy gut.

and it’s so super easy to make.

start by chopping up your cabbage, as thin as you want/can get it… i find it helps to quarter the cabbage first, then cut into strips. you want about 1.5 pounds per 1 tablespoon of salt. once that is complete, add it to a large bowl and begin “squishing” the cabbage and salt together using your hands.

{homemade nutrient-dense beef bone broth}

it seems like bone broth is all the rage these days. everyone is talking about it, bloggers are writing about it, and i see articles in random magazines about it, too. i also find it funny that food has like, fads. i mean – i figure diets have fads because that is essentially what “dieting” is… but it just tickles me when i notice certain “food trends”… you know what i mean?! nevertheless, i’d be lying if i didn’t say i recently jumped on the bandwagon regarding bone broth. 😛

WHAT’S THE BIG DEAL WITH BONE BROTH, ANYWAY?!

– bone broth is ancestral food – our grandma’s grandmas probably made it all the time!

bone broth contains many nutrients such as calcium, magnesium, phosphorus.

– bone broth is also high in beauty-supporting collagen and amino acids.

bone broth is comforting, and great for those days we feel “under the weather.”

bone broth supports a healthy gut and intestinal-lining.

– bone broth contains joint-supporting gelatin, glucosamine, and chondroitin.

bone broth is very cost-effective and you can control the ingredients when you make it yourself!

anyway, my cute little store sells beef bones with the marrow included, which is what you want for making broth.  i’ve read several articles and books about the benefits of ancient cooking and bone broth is something that always seems to be at the top of the list for overall health-boosting properties. i usually opt for a veggie broth when i am stocking the pantry.  however, i couldn’t pass up the opportunity to make something new from scratch.  i just love to create things. plus, understanding the health benefits of bone broth make it extra appealing to me.

after perusing several recipes and suggestions, i did what audrey typically does and i created my own version of bone broth.  this entire batch {which made about a gallon} cost me around $4.00. try comparing that to the stocks or broths you find in the store… it simply doesn’t.  nor does the nutritional value.

ingredient guidelines for bone broth :

– 2 lbs grass-fed beef bones

– 2 large carrots, chopped

– 2 celery stalks, chopped

– 1 yellow onion, chopped 

– 3 cloves garlic, chopped

– 2 tbsp apple cider vinegar

3 or 4 sprigs fresh parsley {optional}

– 1 bay leaf {optional}

{“i can make that!” – coconut flax granola}

i get on these kicks where i think i have all the free time in the world to constantly be making my own food… particularly, easy snacks.  i’m such a label-reader, that i’ll look at the ingredients and be like, “i can make that!” 😛

this time, it was granola.

i had a gigantic container of organic rolled oats sitting around, waiting to be turned into breakfast vitamix cookies, but i kept forgetting to buy jelly!  so as i was grocery shopping the other day, it came to me.  “dude, audrey – you should totally make your own granola!” what inspired this was my other new favourite obsession right now – yoghurt.  i know it’s nothing new to a lot of you, but i never much cared for yoghurt and suddenly – just like sauerkraut, and eggs – i can’t seem to get enough yoghurt. so – i was completely stoked when i saw my favourite brand, noosa had introduced a coconut flavour!!! holy smokes dude.  AHH–MAZING! and i love noosa because they use milk from pasture-based cows.  LOVE THAT!

anyway, to bring it all full circle, i was like, “self, you should just buy some coconut flakes {super cheap} and use some pantry items to create your own granola to compliment this amazing yoghurt discovery!” {sometimes i do talk to myself like that} and so i did it – i bought some organic coconut flakes for about $2.00 and had the rest of the ingredients at home.  as per usual, i didn’t exactly measure – so i don’t have an actual recipe for you, but if i can wing it, you can wing it! 😉

– maple syrup

– vanilla extract

{meatless mondays : double rainbow quinoa}

no, it’s not a typo. i called this dish “rainbow rainbow quinoa because… well – look at it. 😉

i wanted to use up some stuff in the fridge – like my shredded carrots and leftover cabbage… both of which, to me, can be a challenge to use up for one person. i find that quinoa is a great “anything goes” kind of dish. so when i’m looking to use up fresh veggies, i usually throw them in with quinoa. another reason i love quinoa is because it is a complete protein. basically what that means is it contains all 9 essential amino acids. this makes it a great grain for vegans or vegetarians.

rainbow rainbow quinoa – ingredients :

– 1/2 cup rinsed rainbow quinoa

– 1/2 cup chopped red cabbage

– 1/2 cup shredded carrots

– 1/4 finely chopped onion

– 2 cloves diced garlic

– 1 cup raw baby spinach

vitamix-ing {and really, smoothie-making in general} is all about experimenting.  sometimes you nail it. sometimes you don’t. more times than not, it turns out amazing… like in this case. 🙂

purple-ish vitamix smoothie :

– 1/4 cup frozen blackberries

– 1/4 cup frozen pineapple

– 1/4 cup red/purple cabbage

– 1 pitted date {for sweetness}

– 2-3 dehydrated apple wedges {i like to dehydrate stuff}

– 1/2 – 2/3 cup coconut milk

– splash of orange juice

– sprinkle in a little raw protein powder

and the fact that it tastes amazing is a huge bonus to how incredibly healthy and good for you it is!! 😀

after many years working in the organic food industry, i learned a lot about picking good produce.  it’s hilarious to watch me at the market – i take my time when picking out my fruit and vegetables, mostly because i know i’ll be fotographing them. and hey – aesthetics matter!  plus, food is outrageously expensive these days and i’ll be damned if i’m going to spend five dollars for a pineapple and not have it be incredible!

therefore, i browse the produce stands carefully when choosing what to buy. have you ever purchased something and it spoiled two days later or when you cut into it, the flesh was rotting or brown? not everything you pick up at the market is necessarily fresh and/or tasty at any given time – it’s another reason i prefer to buy and eat with the seasons… stuff just tastes better when it’s in season! i mean, wouldn’t you like to be picked during your prime?! 😉

speaking of which, do you know how to pick a good pineapple?  the beginning of their season is just around the corner… and i’m already salivating thinking about them.

one thing to look for when picking out a pineapple – is how the leaves feel when pulled out from the top.  if they remove easily with little force, it’s a pretty sure sign your pineapple is ripe.  you also want to pay attention to the scent. i often sniff the bottom of the fruit, looking for a fresh scent that is strong enough to seep through.  and finally, you want to look for a pineapple that is a little darker in colour… not quite brown, but just golden… Continue reading

when i spotted this bag on sale at the market, i nabbed it up.  it looked super fresh and crisp and i had some leftover polenta at home that i just knew would go great with it.

so i made a simple red sauce with the remains of a jar of marina i had in the fridge.  then i tossed in some extra garlic, mushrooms, onions, carrots, and a little cheese, and boom! – i had a simple and delicious red sauce to pour over my polenta.

foodie side note : i only use organic corn products – corn is THE MOST genetically modified plant out there.  and it’s in everything.  do your own research, i highly encourage it 🙂 Continue reading

{thirsty thursday – harmless harvest coconut water}

i heart coconut water… and not just after a good workout or to help cure a hangover {yep, it’s good for that!} although, coconut water will replenish you better than 10 gatorades {i don’t drink that stuff, but it’s fun to exaggerate sometimes} or a gallon of water alone.  seriously this stuff is amazing!  it’s almost identical to human plasma, and is extremely high in potassium and antioxidants.

there are lots of different coconut water brands out there… and many of them are good.

this one is THE BEST.

i mean, really… it’s THE best coconut water on the planet.  harmless harvest coconut water has figured out the best formula {and philosophy}… and can you just guess what it is?!  KEEP IT SIMPLE 🙂 i dig these guys and their minimalist approach to things.

we all know how much i love kale. i’ve also been known to eat copious amounts of swiss chard. and i never turn away spinach, especially in a smoothie… and sometimes, nothing satisfies like a gigantic bowl of fresh-chopped salad mix…

i know we are heading into winter, but don’t forget to eat a lot of colour during this season!

a simple salad is a fantastic and delicious way to get raw, dense nutrients into your system. while i do find myself “craving” salad a little less during the winter months, i recognize how important it is to eat a salad as often as possible. in the summer i have one every day, but in the colder months, i typically want warm food {like most of us.}  salads are a great way to absorb nutrients through healthy fats {add avocado, for example} and to get extra fiber in your diet. the kids are up early and back in school, the leaves are slowly beginning to change their colours, the air just smells different, and the produce section is starting to feature those fall harvests we look forward to…

and i figured since the seasons are about to change, i would honour the idea of cleansing with the seasons.  so, this week i will feature 5 different vitamix smoothie recipes – each creation will also feature seasonal blueberries… mmmmm…

quinoa dishes are great for many reasons.  one thing i love about them is they are great served hot or cold.  quinoa is a wonderful source of protein and it is even a complete protein which means it contains all 9 essential amino acids.  this makes it particularly good for vegans or vegetarians.  i also love quinoa because i find it sustains my active body for a good while.

{meatless mondays – farmers market pasta!}

oh my goodness was this a lovely meal. the whole day was lovely yesterday : there was such amazing energy in the air!  that supermoon energy was flowing all around me and through me, it was awesome!!!!  did any of you get a chance to see the super moon?  it was too cloudy here, so i will have to camp out next year 🙂  but i definitely still felt the energy this weekend!!!!

i took a little trip to a farmers market a little north of me in search of some kirby cucumbers to make pickles with.  no luck in that department, unfortunately… however i did discover some amazing things while there! and with most of the ingredients i purchased yesterday, i made this incredible pasta dish!
