this was a seriously fun dish! easy to make – fresh, light, healthy, perfect for summer on the patio. easy clean-up. can be served as an appetizer or main course if you make extra and serve with a light salad or steamed veggie. perhaps some organic carrots or corn would compliment this nicely… stick with the whole texture theme 😉 Continue reading
celery root mashed potatoes w/ seasonal garlic scapes
18 Juni have to say, these were pretty amazing!!!! i wanted to try two things with this dish – both the celery root and the garlic scapes. i had been told by a few people that celery root goes well in mashed potoatoes. and i love to experiment with mashed potatoes – definitely one of my favourite vegetarian staples! so, i did 🙂 Continue reading
another {vegan} Qrunch burger meal
10 Juni am quickly becoming addicted to these tasty delights. Qrunch burgers are yummy quinoa patties and are great source of complete proteins without any dairy, soy, gluten, or wheat and they are vegan. frozen, but previously cooked, delicious qrunch burger patties are a marvelous and easy way to get whole grains into your diet — and seriously, they taste SO GOOD!
vegan {nutrient-packed} pho
6 Junhave you met pho? it’s a wonderfully healing noodle soup that originates from vietnam. my roommate introduced it to me when i first moved back to colorado and i was immediately hooked. loaded with ginger, garlic, and other healing spices, this dish is something i always crave when i’m not feeling my best. whether i just need a boost of vitamins, something warm on the throat, or a little spice in my life – i reach for the pho. Qrunch burgers featuring sauteed vidalia onions
23 Mayi’m pretty sure i have mentioned Qrunch burgers before… they are ahh-mazing. a coworker introduced them to me a while back and i have been hooked ever since. i made my quinoa patty benedict with them once, and i have also just eaten them as a side dish. i was inspired by the seasonal vidalia onions available right now. this is oh-so-simple, too. i could’ve easily eaten two, as well. 🙂 Continue reading

sprout sammy
10 Mayi LOVE sprouts! love them. not all sprouts are created equal, however. i’m not a fan of ALL sprouts, but i do love pea sprouts. especially on my sandwiches!!! i want to try to grow my own some day, as they do get pretty expensive and are so perishable. but they add a ton of flavour to my favourite sammy combo – avocado and tomato. i made a yummy sandwich for lunch the other day and i had to share the recipe. i originally wanted to do a wrap, but forgot to pick some up, so i used my trusty sandwich flats 🙂 Continue reading
perfect light and healthy fish tacos
3 Mayi’ve been craving fish tacos for a while now… i wanted to use up my tilapia i bought on sale a few weeks ago and froze. tilapia is an easy white fish to prepare, it doesn’t take long to cook, and it pretty much takes on the flavour of your dish. Continue reading
