{meatless monday} — an easy make-ahead meal : rainbow rice

here’s a great make-ahead meal that keeps well in the fridge – one you can take to lunch during the week or add to your plate at dinner time. nutritious, colourful, and budget-friendly – that’s quite a trifecta!

{try-me tuesday} – a pomelo fruit

ever seen one of these? you may have passed them in the produce section and wondered what that odd-looking grapefruit type thing was… well, it’s a pomelo – or, pummelo. they aren’t exactly inexpensive, i will say.  this is because they are usually sold by the pound and are rather heavy.  i paid about 4 bucks for this one… but i bought it with the specific intent of sharing it on the blog with all of you.  they are super yummy.  if you like grapefruit, there’s a good chance you’ll like a pummelo… the rind is very thick {about a half inch to inch} and the flesh is usually pinkish, but can vary depending on size, origin, etc.

this guy weighed about 2.5 pounds – i’ve seen them as big and as heavy as 4 pounds – that’s like a 9 dollar piece of fruit! haha

so yummy. and so good for you : fiber, vitamin c, and potassium all come with pummelo’s yummy flavour.

try one, for real!  eat them by the slice, throw them in a smoothie {white part too, it’s full of fiber!}, add to a fruit salad, freeze and throw in some soda water… whatever you do, enjoy it!

{meatless monday} — spaghetti squash primavera; it’s kind of one of my favs.

i make this meal a lot.

it’s basically just a bunch of vegetables.  have you ever had spaghetti squash?! it’s amazing.  i want to make some kind of soup with it soon… ideas are welcomed!

i moved recently, as i think i mentioned… and i’m still getting used to my new kitchen.  i will admit i very much miss the kitchen i used to live in – i just loved how big and open it was and with LOADS of counter space… but i’m grateful for my new home and once we get the garden going, i will be extra joyous!  and yes, i will be blogging all about that adventure!

here’s today’s simple meatless monday recipe.  takes a bit longer to make than most of the dishes i feature on this blog, but this is well-worth the wait! so good for you, packed with nutrients and vitamins and yanno, it obviously tastes amazing or why would i bother?! 🙂 Continue reading

{meatless monday} – another spaghetti squash meal

i heart vegetables.  i especially heart spaghetti squash, it’s seriously one of my favourites!  and it’s hard to get it all year round, but i try anyway.  right now is the best time to buy it – totally in season, and they are HUGE.  i like that there is usually a variety in size with spaghetti squash… i typically buy a smaller one just for myself and my roommate, although it is still very good as leftovers, so make extra if you want!

i also realized, when browsing through previous posts to make sure i wasn’t duplicating this one, that i eat a lot of tomatoes.  i mean, A LOT!  i cook them, which i’ve read is actually better than eating them raw because they are more bioavailable that way. in other words, your body uses the nutrients more effectively because they are cooked… i don’t fully understand it all, but this fact i found online was interesting :

Lycopene, the antioxidant found in tomatoes in large quantities, is located in cell walls. Cooking tomatoes releases lycopene to do its work. A combined analysis of 21 studies published in Cancer Epidemiology Biomarkers and Prevention showed that men who ate the highest amounts of raw tomatoes had an 11% reduction in risk for prostate cancer. Those eating the most cooked tomato products fared even better: their prostate cancer risk was reduced by 19%.

{travel tuesday} — colourful new york in autumn

i’m visiting NYC in three days… and i actually kind of got a little nervous.  for real legitimately nervous… what?!  i lived in manhattan for 3 glorious years, and i ran the LES.  why am i nervous?!  it’s like i’m going to rekindle a former relationship or something.  haha

i’m definitely bringing my camera with me, and although i won’t get up to bear mountain park {where these images were taken}, i do hope to catch a glimse of a few of these colours throughout central park or the like.

for now, i’ll share these with you… oh how i love the autumn!

{meatless monday} roasted rainbow zucchini pizza strips

HAPPY LABOR DAY!  hope you are enjoying the weekend – getting some late sunshine, firing up the grill one last time, taking a final dip in the pool, and of course, eating and drinking!

i thought i’d share a fun recipe in honor of the holiday weekend.

these were super fun and easy to make. i made some in the past, but wanted to try a little different approach this time – mostly, more colour. i love zucchini anyway, but the inspiration for this dish was to use up some of the cream cheese i had in the fridge as well as a few of the tomatoes i had lying around – never want those to go to waste!!!  when i spotted the multicolour ones at work, i had to snag them up.  it’s too bad there aren’t too many “blue” foods, or i would’ve made a slightly more festive version 🙂 Continue reading

these could not be simpler.  nor more delicious and healthy and light and good for you.

– whole wheat locally made tortillas, warm them up if you like

– organic black beans, drained and slightly heated via stovetop w/ a little S&P

– fresh avocado, chopped

– organic cherry tomatoes, chopped

– organic sharp cheddar cheese, shredded {normally i’d buy white, but the colour is only from annatto and i’m down with that, because it makes the rainbow in my rainbow tacos look really great…}

forbidden colours

i couldn’t think of a clever name for this dish, so i just made that silly title because i’m featuring forbidden rice and it’s full of colour.  so there.

i’m not sure how available forbidden rice is, but of course you can find it at whole foods market. what i love about it is the flavour.  it’s unique in that it is kind of sweet and of course i think it’s super cool that it’s purple!!  {almost black – it cooks up purple!} Continue reading
