{glorious golden beets}

another beautiful piece of produce i picked up at the cutest organic store in town….

have you ever had golden beets?!  i just loooooove them!  i am pretty sure you can keep the skin on – so long as you scrub it pretty thoroughly.  i just peel mine.  these were so cute and little!

i usually just steam mine.  i find them to be so delicious, i don’t even add any S and/or P.  i think they have the most unique flavour. i just love to put them in salads or just munch on them alone… so good! beets are loaded with vitamins and minerals and they are just an all around amazing vegetable!

i noticed a few new followers have joined the fun – thank you and welcome!

in case you don’t know this about me, i love to eat anything with colour. i believe in living by the motto… well, a lot of “mottos” really – but one of them is “eat the rainbow.”  if your food has colour naturally, it is good for you!  this dish definitely meshes with that motto.  i whipped it up last week when i was doing a short veggie cleanse.  i just love mushrooms – do you?!

this is a great vegan dish, or a healthy random way to get in a ton of veggies all at once.  sometimes i’ll construct meals entirely of vegetables… this one i just made up on the spot, when inspired by the fresh-looking produce in the market.

{“stray cats” – a special sunday post}

so – pretty much everyone knows that i used to live in new york city for about 3 years… part of me is {no doubt} still there, and always was and will be.  i miss it every day, but i have to trust my heart that i left when i was supposed to leave. the memories i made there were so special, so irreplaceable, and so life-changing that i reflect on my experiences often.  in fact, i know that i need to start writing more about them.

aside from being an old soul, i’ve always enjoyed the company of older people… even when i was young, most of my friends were older than me. when i was in manhattan, i lived with a spry, lively, hilarious sagittarius who was more than twice my age, and we were the best of friends.  don’t misunderstand – she could keep up with any 30-something i knew! i often don’t speak of her directly, nor do i of many of my friends, out of respect for their privacy.  however, this week i just had to post something in honour of the news i received from my former roommate in NYC.

this foto was taken in 2010 at our favourite spot, quigley’s, which is now closed. we frequented “quig’s” at least once a week, sometimes more – depending on fun events like mardis gras.  it was like our own personal “cheers” – everyone knew our name. the lady across from me in the foto is my lovely former roommate and still very close friend… we’ll call her “JG”.  the gentleman next to her is the quintessential new-yorker with the best sense of humour.  the gentleman behind me just lost his battle with cancer this week. his wife, behind him, recently had the same fate last year. i like to refer to them as the “IRISH” – because they are.

these people had a HOUSE in my heart.  not just a room, a house.  the couple that lost their lives to cancer were like family to me. quite literally – they invited JG and i over for every holiday dinner. most of JG’s family didn’t live in NYC, and obviously none of mine did either.  after a while, it became a running joke to call us “the stray cats” because we would just wander over for dinners, as they always invited us and made us feel like family.  the IRISH had a home business and they even hired me to take some fotos for their marketing.  these people were just so special to me.  when i found out about MISTER IRISH’s death, a part of my heart died, too.  that may sound morbid, but that’s how special these people were to me.  i never got sick of hearing stories about how they fell in love, or how much they remembered about the city changing, or how they knew about the “best little bakery in town” — or just their warm, kind, open, and loving spirits. it chokes me up to think about how special the IRISH’s are/were and just how blessed i am to have met them and been so immersed in their lives {and vice versa}.

things i miss most : morning paddle tennis games with a cup of coffee from the bodega downstairs, long chats in the living room with evening light drenching all the furniture, my endlessly-full wine glass, their amazing taste in art – particularly that italian painting above the kitchen table – i was obsessed with it!!!… what i’ll miss most is the way i felt whenever i left their presence… just so enriched!

so, in honour of the IRISH family, and my lovely former roommate JG – i bought these simple and gorgeous magenta carnations… they are JG’s favourite flowers.  i’d often buy them for her, since there are flower shops on every corner in new york. yesterday i bought them in honour of her, as well.  she stayed by IRISH’s side in his last days, and told him “the stray cats love you” — that meant a lot to me, since i couldn’t be there to say goodbye.  i also love carnations because they may be the ‘bottom of the totem pole” when it comes to flowers, but they last so long and they smell incredible and they will remind me of all the amazing memories i had in NYC with IRISH and JG.

heaven has another angel… and i know he’s being greeted with endless amounts of love.

{cherry sweet-tart vitamix smoothie}

i’m a little late on posting today – it’s snowing here in colorado… and, sigh – i’ll just go ahead and say it – i’m over it!  can we please be in spring now?!  i’m just dying to put on my sanuks and put away my wellies.

i’ve been making a smoothie every morning since we are ‘officially’ in spring now – but i admit it’s just not as satisfying first thing in the morning as a warm cup of coffee or tea.  but i’m determined to start cleansing my body out, preparing it for a different season, and lots of different veggies to compliment!

in the meantime, here’s another smoothie recipe.  i created this one in mind as more of an evening smoothie. tart cherries and tart cherry juice are good for insomnia, remember?!  i call it “sweet-tart” because i used sweet frozen cherries and tart cherry juice… and it turned out rather delicious!

cherry sweet-tart vitamix smoothie :

– frozen sweet cherries {1/2 cup}

– 3 frozen strawberries

– 3 frozen pineapple chunks

– 1 pitted date

– 1/2 cup coconut milk

– 1/2 cup tart cherry juice

how’s that for a title?!

vitamix-ing {and really, smoothie-making in general} is all about experimenting.  sometimes you nail it. sometimes you don’t. more times than not, it turns out amazing… like in this case. 🙂

purple-ish vitamix smoothie :

– 1/4 cup frozen blackberries

– 1/4 cup frozen pineapple

– 1/4 cup red/purple cabbage

– 1 pitted date {for sweetness}

– 2-3 dehydrated apple wedges {i like to dehydrate stuff}

– 1/2 – 2/3 cup coconut milk

– splash of orange juice

– sprinkle in a little raw protein powder

and the fact that it tastes amazing is a huge bonus to how incredibly healthy and good for you it is!! 😀

{classics : grilled ham and cheese}

did ya’ll sleep in today?!  i sure wanted to… daylight savings always jolts my system.  takes me a week or so to get used to it – but goodness, do i love having that light in the evenings!!! i just look forward to the mornings catching up, ya feel me?!

i’m going to start my seeds for my garden this weekend and of course, i’ll be documenting the whole thing. i bought tomatoes, cucumbers, lettuce, chives, and leeks for now.  i have attempted to grow from seed before, but to no avail.  i learned my lesson with my lovely tomato plant last year and i just don’t think some kinds of lettuces grow well here.  SO – we are going to try again 😀

my awesome landlord has all the fixins’ to get my garden going and plenty of outdoor space in which to plant it all… one of the things i’ve wanted so desperately over the last couple of years was to have a garden. i’m so glad i can finally try!

i do love me some good ol’ romaine lettuce from time to time – the crunch is so good.  not much nutrition going on, but i do find myself craving the fiber and just wanting something to put dressing on, mostly.

these are always always always a hit.  i’m not much of a baker, but when i find something that is easy to make and that people like, i try to create it into my own.  i have yet to quite create the perfect consistency for these {i’m a bit of a perfectionist when it comes to anything i make or do}, but i do think i found the right name for them.  the ingredients are so simple and healthy that you could literally eat them for breakfast – and not feel at all guilty about it!! they are also great for holiday parties or after school snacks. a good source of dietary fiber and protein as well as healthy fats. if you’ve been a reader for a bit, you probably know by now that i do not often cook pasta.  i am getting better, but for the longest time it just seemed like i couldn’t make a decent pasta dish to save my life.

mostly, i just throw together stuff in my fridge and call it a “primavera” — and i’ve been on this kick where i just make my own sauce fresh every time i make a pasta dish or spaghetti squash dish.  i’m all about things in one pan… make it easy! Continue reading
